Sharepoint template - remove documents from home page

Hello I am trying to remove the default document quick access that is created by default on the home page aspx when I create a sharepoint site.

I have an org template, and I would like to know how should I modify the json file to remove this documents quick access.

Are you trying to remove it from specific SharePoint site you created? If yes - you can edit the page and remove the document library web part: Create and use modern pages on a SharePoint site 

Also, you cannot modify SharePoint default site template to make any changes like this.

If you are creating custom site template, check below Microsoft official documentations. But I think handling web parts on site pages is not supported currently:
