Does anyone know of a way to selectively block users from accessing Delve Profiles? The requirement is that a groups of users need access to a single SharePoint Site Collection, OneDrive for Business and Email ONLY. These users should not be able to search for and find other people in Delve, which would give then access to Contact Numbers and other profile information. I know that the content, as in documents are all security trimmed etc but what about user profiles?
Thoughts would be appreciated...

You can't really, the only way is to remove the SPO license. Anyway, the user can still see the contact numbers and any others details in the GAL or in SPO, so disabling Delve will not make much difference.

As @Vasil Michev has said, there is not posibble to do a granular block of Delve nowadays...you can block for all the users in the SPO Admin...but not for specific users
