Hello,
We would like to monitor mail flow between Office 365 mailboxes. Like if there is any delay between emails. Similarly, database health. Is this possible ? Please share any ideas. Thank you!

SolutionExO is a SaaS offering, as such you don't have access to the backend servers and the responsibility of keeping them up and running (and healthy) is with Microsoft. There is no way to get access to database level information, but there are some third party tools that can help you monitor service availability and also some performance data. Look them up online.

Like @Vasil Michev said, you don't have access to the backend database. Even if you get the mail delay metrics, you can't do anything to reduce the delay as the backend infrastructure is completely handled by Microsoft.
I am just curious: What is the purpose of monitoring the database health and email delays?.
