I have noticed our usage statistics within the Teams admin dashboard have changed to 0 for a few days. The usage reports in the O365 admin center also seem to have stopped tracking O365 and Teams usage. Any insights would be much appreciated

Yup, it seems to be a global issue. I've pinged few folks at Microsoft about it, but it's the holiday season...
There's also a more general issue with reports being delayed, check MO188633 on the SHD.
