Can anyone tell me how I can get PowerPivot for Excel 2016 it doesn't appear as an option to tick in
Go to File > Options > Add-Ins.
In the Manage box, click COM Add-ins> Go.

Office 365 itself is not enough, Power Pivot is for Enterprise subscriptions mainly. Please check the latest link from Detlef's post.
