At the moment there is no option to delete a full chat conversation. A user has the option to delete a single message or hide the conversation. It this an option what will come to Teams?
Chat conversations can be archived or removed using retention policies. We will likely not put that ability into the user experience. However, there is a Uservoice item on this where you can vote: Delete chat conversation – Microsoft Teams UserVoice
