dejaysf this is usually because the column is multiple lines of text and you've set it to rich text or enhanced rich text. Try changing it to plain text:

RobElliott Thanks for getting back to me. Unfortunately, I don't appear to have the same options to change the text. Any ideas?

dejaysf your screenshot was from the column formatting not the list settings. Go to list settings and change the text options for the column there.

  RobElliott That didn't work either. This is the message I receive. All the data is removed, but not deleted when I change to plain text.
