There is no absolute requirement that you deliver course training in successive days. TSPs can get creative with the cadence in which they are delivering training. If you want to extend an official MSFT course over weeks and months because it fits your business model, then you are empowered to do that.
I think the tricky part is labs. Labs have inherent cloud cost exposure which is why they are generally limited to quick durations. I know there is not currently a Microsoft solution for this. I would suggest working with your preferred Authorized Lab Hoster (ALH information is in our Get Started documentation), to see what options are available to you.
