SharePoint Online's "Move To" feature no longer showing my sites

I just tested and I am able to copy file from one SharePoint site to another SharePoint site within same tenant without any issue.

Try this:

Go to the document library in the destination SharePoint site
Use Pin to Quick access command at the top to pin library:
While using "Copy to" option, you can see the pinned library in quick access section at the left hand side:

Sadly, 2 years after the original post, the feature is still no better. Unfortunately ganeshsanap's suggestion only works if:

* You can pin the destination site to Quick Access - even if you don't really want it for general quick access

* It propagates for use in a reasonable timeframe (in some cases seems to take 24 hours)

* You are very patient and believe that SharePoint really is a productivity tool rather than an unproductivity tool.

I don't understand why there could not just be a quick access / recent sites / followed sites toggle as there are in other places in the SharePoint UX.
