Hi there,
When it comes to news in SharePoint and the news web part, one can see the publication date in the display of the webpart before entering the news article. However, my question is whether there is a way to display the publication date within the article itself as default?

There is - edit the page and then edit the title area(hover over main image, click edit webpart. Change as below:-
