How to set a SharePoint list to be sorted by today's date as the default?

Hi - not sure what you mean by sort the list by Today's date. You can sort by date in either ascending or descending order. Are you also looking to apply filtering so that only items with a date of today or in the future are showing?
Echo'ing the above comment. You could also set a default sort (and/or filter) order in the list view in the default view (or whatever you have set as a default).
