Jason1900 You can set the sort order for columns from classic experience list view settings.
- Click on settings (gear) icon
- Select "List settings"
- Go to "Views" section
- Select your view by clicking on it
- Apply sort order as per your requirements and click "OK"

Is there a limit to how many fields can be seen on the card?
I've been having some issues in setting up the card, not all columns appear available for selection on the "Edit card" menu and even if I try to force via the JSON format window, fields I need can't seem to be brought into the card

You need to go to the legacy settings for the list view. One way is to select All Items then select Edit View. There you can find the fields you want in the card, and select them. Then select the board view you created and customize card. You should see the fields you just selected and you can add them to your card. There is a limit to how many can be on the card (can't remember the number).
