Office 365 – the best “Replacement” for File share

I can't believe you have no replies to this post LoL..
So I have a statement and a question: first the statement: We are getting ready to move our onprem shared drives to Teams/OneDrive/Sharepoint our user base is approximately ~ 7K users.
Question: On our onprem we have permission granularity to allow users to "Read, Modify and delete own" or you may have "Read, Modify with no delete options"
How do we apply same Access methodology in Teams/OneDrive/Sharepoint ?
