MS Launcher in the work profile is not intended to be used as a dedicated launcher. You use the avatar icon at the top of your Feed to toggle between personal and work feed. Switching to the work feed should switch to the MS Launcher in the work profile.
Of course this is buggy too and doesn't work on my phone. My tablet does let me switch to the work profile launcher from my feed in personal profile but it just crashes immediately.
