Relationship of Office Client to Locations
I'm looking for a guide that explains the use cases for the Open and Save dialogs in Office client and how they relate to O365 Groups and SharePoint.
Question - what is the difference between Sites and SharePoint in the dialog?
Question - what determines the things that show up in each of the Sites and SharePoint views in that dialog?

Sites shows you SharePoint sites for any account that you mgiht have used in the past. Sites are specific for a single login hence the bits that you masked with red.

This depends on the login that was used.

Go to the library and click Conntect to Office:

- I don't have Sharepoint, only Sites. Have you opened libraries from multiple accounts, perhaps?
- The last libraries from which you have opened a file. You can pin libraries to the top of the list, if you want.
- Open the Browse dialog and put the library URL in the text box.
