Or you can just use the good old "Copy to Discovery mailbox" functionality available in the EAC: https://docs.microsoft.com/en-us/exchange/policy-and-compliance/ediscovery/copy-results-to-discovery-mailboxes?view=exchserver-2019
Or go even more old school and use the Search-Mailbox cmdlet to copy the content of the SAR mailbox to a shared mailbox directly.
