Changing document permission

When sharing an Excel spreadsheet, there should be an option to determine if recipient can edit or only view the file. Once the recipient has been given edit privileges, they are locked into that permission. There is not a way to change their permission to view only. This is one example of the poor & convoluted permissions logic system in SharePoint. It would be extremely helpful if Microsoft could modernize this system to reflect today's dynamic environment.
