Hi,
Is it possible to save attachments from an email directly into a SharePoint library? Right now, I'm only seeing Office 365 groups. Also, the files are going into a library that isn't seen directly from within SharePoint.

You can probably achieve this using other procedures as well. But perhaps this is good enough?
*edit* just tried the way your screenshot shows and it's just a default save to the Documents folder.
