windows 11 health check doesn't recognize cpu

The interesting part is that my cpu is I7-7700K AND is listed under the Supported CPU list for Windows 10 22h2
This answers for your query. Though the processor may be supported for Windows 10 but it is not listed on Windows 11 list of supported processors. Please check:

7700K is still working quite well and you can change the registry during install to bypass the Windows 11 system check.
