Windows 11: Gallery not showing pictures, just "stack" and the modified date of 1601 - Please help

I've encountered a new issue that I haven't seen before.

Picture below is how the Explorer Gallery is looking currently.

Usually my Gallery on Windows 11 would just showcase the photos/pictures in the linked folder (such as /pictures). But now it doesn't do that anymore, and instead it just showcases a single blank "picture" that I can click on, and if I do it just opens the /pictures folder, but not in gallery. It says the file type for this blank picture is a "stack". And it has a modifed date of 1601.

Is there anyway for me to revert this back to how it was, with Gallery just showcasing all pictures in the gallery?

I've tried restarting, I have tried deleting iconcache and restarting, I have tried to remove / add folders for Gallery. None of it has worked so far.

System: Windows 11 Pro, 24H2 OS Build: 26100.8894 Processor: AMD Ryzen 5900X RAM: 32GB GPU: Nvidia Geforce RTX 3080
