Where can I get a list of all installed Programms and start them?
Just something like a "Programm" List.
I can't even start excel on the up to date start menue - because it is't listed till after 15min of a running pc.
Other programs that are correctly installed are nowhere to be found and need to be started completely manual.
So where or how can I turn off this new "features" and get the old program list? without any widgets and ribbons.

You want an immediate, complete app launcher instead of waiting for Start search to discover Excel. Open Start and choose All; current Windows 11 can show installed apps as a list, grid, or category view. For a direct Explorer-style list, press Windows+R, enter shell:AppsFolder, and press Enter. It includes packaged apps and traditional desktop programs and lets you launch or create shortcuts. Settings > Apps > Installed apps is the authoritative inventory, but is intended for management rather than launching. If Excel appears only after 15 minutes, this is not a personalization feature. Restart Windows Explorer from Task Manager, install Windows and Office updates, and run the Search and Indexing troubleshooter. Verify Excel launches from its Office installation folder, then repair Office if its shortcut is missing. Pin working entries to Start or the taskbar. If shell:AppsFolder is also incomplete, test a new Windows profile before rebuilding search.
