sorry after re-reading this I realized I may have miss interpreted your question. Are you able to create any sub-site or are these particular templates giving you issues? If so I wonder if any supported features need to be enabled at the site collection level.

thanks for your reply. The problem disappeared by itself. We changed nothing... so that was a pleasant surprise. It's now working as expected.
