I believe I found the answer and would post to help anyone that runs into a similar issue. By using the CSV of migration within the https://spmtreleasescus.blob.core.windows.net/install/default.htm I was able to target a specific subfolder I wanted to migrate my files to in the new SharePoint online system. Microsoft provides details & examples of how to set up the CSV in programs like Excel at the following address: https://docs.microsoft.com/en-us/sharepointmigration/how-to-format-your-csv-file-for-data-content-migration
