I would recommend you to keep it automatic as it's rare that sites even in a large project becomes more than a few GBs.
If you're facing issues with storage, I would recommend you looking into what sites are using up the most space and starting to delete the version history of those files. For example 1gb PowerPoint edited 10 times will take up 10GB storage.
Also have a lifecycle policy around files, sites and teams is recommended.

Hard to leave storage as default sometimes as that just opens up the possibility of eating up a lot of storage with no controls in place
