Site Page List - Choice Column Default Value Not Changing

Hi Tech Community,

I have a choice column on a site for use with site pages called "Page Type".
I have 3 options in there and the default value is changing in the settings, but being ignored when I create a page.

When I create a new page it is setting the default value of Page Type to one of the options but not the option I selected as default...

I tried to delete and recreate the choice column but no luck either. I did name it the same as before though so there might be a stuck variable in the back end causing that, unsure.

I tried searching for people having similar issues but it was always close but not the same.
