dchatman- Subcategory is not a folder, it is just a column with a dropdown choices and users select a subcategory dropdown value when uploading the document not before that from the view. So in order for subcategory "January 2020" to show up, you upload a document and when filling in the subcategory property for that document you select "January 2020", it should show up after that.
I guess I may have been in the correct place. In the screenshot, I put that "January 2020" in the Subcategory field about a week ago but it would never show after checking-in and approving the page. Is there another step i'm missing?

You don't upload documents to the sub-category. You tag the document with the correct sub-category.
You can create a sub-category folders within the Document Library and then apply default columns values to the sub-category using column using column default value settings.
