Sharepoint eSignature: can't make it work

After learning that Sharepoint esignature was finally available in EU, I spent the whole day trying to implement it in my tenant (I'm Global Admin).

I followed all the steps correctly, set Syntex up with the subscription, enabled for all sites etc, but it won't appear anywhere in sharepoint nor in Teams Approvals app (which was the goal all along).

I can't even get to the point where I edit the pdf to prepare it for signatures, and after all these hours I just feel stupid for not understanding what I'm missing.

Can anyone help?
