set document access based on creation date

Anyone know if I can do the following- I can't find anything useful online. We have a person is in the visitors group in SP. The visitors group has access to a specific folder, with restricted view.

We need to prevent one person in the group getting access to any new documents added to that folder, but we want to allow them to continue to view documents within the folder that are older than a certain date that we set.

We don’t want to trigger a new link being sent to the person – so setting up a one off folder with those permissions isn’t an option as such.

Any help appreciated.
