Quick Parts and Document Set templates

Hi all-
I finally learned how to leverage document sets, but it appears I cannot edit templates to connect quick parts in Word to the document metadata. I’m bummed!!!
Does anyone know a way that I’ve just not yet discovered, or perhaps a workaround?
