Does this differ in any way when using a Modern Media Library?

Luke...do you mean the Site Assets library?  Generally if the list/library has the ability to create views, which they all do, then they are subject to the 5K list view threshold.

    Sorry, yes I am. However I don't seem to be getting the same view settings as yourself. Please see the attached.

      Hmmm...When I go to the default Site Assets library in Site Contents and go to the default view, I'm able to see the standard "view" functionality and configure it as expected.
