Preventing O365 Group members to edit site navigation and pages...
1. How can I achieve subject issue?
2. Prevent users to delete files/folders from O365 group "Documents" page

Please note, if the current permission levels (Full Control, Read Only, etc) don't match your needs, you can créate a new one from that same page (there's a button on the Ribbon: Permission levels), but don't edit default levels, otherwise the change would affect all sites.

Site settings -> Users and permissions -> Site permissions
There you will find all groups with permissions on the site. Change Group permissions and/or move members from one Group to another with more restrictive permissions.
