ModernUI ListItem Editing Problems
I've been having these issues for a long time, but finally got screenshots ready today. I find the modern UI incredibly frustrating at times, and today it took me at least half a dozen attempts to get a simple record saved.
Step 1 Open a list item for editing using the Modern experience
Step 2 Click on the edit button to the right of a field set for Multiple Lines of Text (with Enhanced Rich Text)
Step 3 Paste a few lines of text into the provided dialog box. The next thing that happens is merely annoying and frustrating, but essentially functional. The Ribbon at the top of the dialog box will switch from the "Edit" tab to the "Format Text" tab. That's kinda fine and kinda good unless you were trying to paste something into the box and go save it, because by the time you reach for the Save button, it's suddenly become a "Paste" button, so the result is Pasting a second time. So you have to go back and delete the second set of text, click the Text tab, then save. It's annoying but functional.
suddenly switches to
Step 4 Now let's imagine a gal is trying to paste more than just a few lines, perhaps a a few paragraphs worth of text that extends beyond the original sized dialog box. Now what happens? All the ribbon controls disappear completely. Can't save, can't format, can't do anything but exit without saving. As I noted in another thread, once you click outside the dialog box, everything disappears forever, so it's like a double-whammy with a cherry on top. Workaround is to paste a few lines at a time and keep clicking that Edit tab and Save button, then re-open and add a few more.

- Might I ask If you are seeing the same experience on different browsers? By the way to me these problems are just demonstrating that the modern UI is still not finished

Good question! Old habits die hard, and I work out of Internet Explorer most of the time (IE11). I thought I had tested these with Chrome before, but just double checked and yes, same behavior.
As a tip, I've found that in IE 11 the Compatibility view set to ON for sharepoint.com does help considerably with some of the frustrations in working in SharePoint lists. Doesn't seem to be a panacea, but it's my first go-to when I have issues with pages not refreshing or views not being editable, etc.

so you are in the modern experience and get a ribbon? that is Strange to say the least. Or are you editing a page with a modern webpart on it? instead of the direct modern list?
