Modern document library word template (not content type)

Does anyone know if this works for modern doc libraries?

I'm trying to save a word template with metadata fields surfaced in the document without having to go through the whole content type rigmarole.

When I try to add a new Word doc to the library after editing the template to my liking, the document comes up blank...

I've noticed the new Doc Info Panel in Word 2016, but there's not much documentation on it and it's not especially clear to me what the best practices are around it...
