Is it possible to hide document libraries on SharePoint?
I see that folders within a document library can be hidden, but I would like the whole document library to be hidden.

on the quick launch, the site contents page, or both?

It is possible, just edit the library permissions to un-inherit from the site and change the permissions accordingly. Any users without permissions will not be able to see it.
