I think the only option here is to access the sites you want to follow navigating from the Home Site configured for Viva Connections.

Unfortunately, when you navigate to the homesite through the Viva Connections homesite via the Teams mobile app, the option to follow the site is not available when you select the ellipsis (three dots) in the top right corner of the screen. This only happens when using the Teams mobile app. On the SharePoint mobile app, the option to follow a site shows when you select the ellipsis (three dots) in the top right corner of the screen.
