Add site activity on team site in SharePoint 2016
A Web Part called "Recently Changed Items" exists (under category "Search-Driven Content"). You can insert this Web Part on your page to show recently modified List Items and Documents.
Is this what you're looking for?
Oh yeah I founded that too, but then it only shows the pages I recently edited, not specific documents. Or well, the middle one is a document, but when you click on it, it opens in Word not Word Online. Do I have to change something in the settings of the webpart?

The Web Part is search-based. After changing any of your documents it could take a little while for SharePoint's search engine to detect (index) your change and show your recently changed document on-top of this list. "Pages" are considered documents so that's why they also show up.
If this Web Part queries for the wrong data you can consider adding a "Content Search" Web Part to the page and configure it with exacly the Search Query you need to retrieve your recent changes.

Oh it is definately possible to do so. You can get there in different ways but they all require more technical (Front-end Development) skills. Making use of the available search Web Parts you can create what are called "Display Templates" in which each search results is presented as defined in the template. Defining these kind of templates is typically done by someone with more technical (developer) skills.
You could even decide to (let someone) build a custom Web Part, but that requires even more skills and has bigger impact on maintenance...
