Outlook - DesktopApp - Autoreply not working (server not available)
Although Microsoft says the problem has been fixed since version 2508 build 19127.20000 (please see Cannot open the Automatic Replies setting of a shared mailbox in Classic Outlook - Microsoft Support), we can still experience it with version 2510 build 19328.20266.
Therefore we still have to use the version 2505 build 18827.20202

In that case I'd recommend opening a proper support case directly with Microsoft so that they can obtain logs and traces to analyze why this is still happening in your environment.
For how many users does this issue repro for you?
Can they also repro it from outside the corporate network?
Can you repro it within your environment when you switch to the Current Channel?
Does it work as expected for their primary mailbox?
When creating a separate Mail Profile with the Shared Mailbox as the primary mailbox, does it work then?
When creating a new separate Mail Profile with the Shared Mailbox as the secondary mailbox, does the issue then still repro?I'm supporting a very large corporate environment in Germany as well, using all possible release Channels, and this issue hasn't popped up during the holiday season anymore.
That said; For this particular issue, I would really recommend against lagging so far behind and using unsupported builds. Either use Outlook on the Web as an alternative or switch the affected users to Semi-Annual Enterprise Channel 2502 or even 2408 to make sure you still have a supported build and all security updates installed.

Obviously, although described as for shared mailboxes only, the error occurs in our case for standard mailboxes and for outlook profiles in general on our terminal server (existing 2016 and new 2025) but even for some local Outlook environments on the fat clients.
