I tend to share urls for documents that are in Team channels in chats, in planner, and for documenting work in meeting minutes. I would REALLY like to have a url shortening option to do this. ...

There is a uservoice request for URL shortener that is under review, so that feature might come. Vote for it.

There is multiple services for short URL where you just paste the long URL and get a short one instead, but there is no integration Teams what I know about. I use bit.ly but there is plenty of others.
I agree with the URL shortener. I am trying to use Lists to keep track of tasks for my channel, and the list will not accept a link.
