Currently it is not possible to set any schedule like that. If you want all external calls to go directly do voicemail the best way is like you described, set yourself to DND and add internal users to priority contacts to bypass the DND.

Thanks LinusCansby I figured that'd be the answer. I was hoping I'd missed something, or that Microsoft had used a different terminology for the same feature.
I dropped a UV yesterday as well as I figured my searching didn't find anything similar.
