Best you could do now is to have a separate Teams meeting policy assigned to your account with the settings you’d like to use. As the breakout rooms are meetings they will use the Teams meeting policy settings configured (the global is default).

I would like to have my regular meeting with the parameter "DesignatedPresenterRoleMode" with the value "OrganizerOnlyUserOverride" and my breakout rooms should have "EveryoneInCompanyUserOverride". I understand that my meeting and my breakout room inherit from the same meeting policy. I wish to keep my parameter as "OrganizerOnlyUserOverride" because it's more practical for all my teacher. They don't have to fear to forget to set students as attendee in regular meeting.
