Call Statistics and Billing API
Is there an easy way to get a tabulation of what user made what call on a monthly basis. Something like an API export that I can grab inside a BI tool like power BI then perform further analytics on....

The Call Statics are available in the Teams Analytics as you mentioned. There is no API called as Billing API. You need to build a customize solution for the same. There are third party solution available for the same.
