Hi Akhtar,
If your users' UPNs and email addresses won't change during the AD forest migration, I believe the option 1 would be the most easiest.
First let AD accounts in forest B to be synced to O365 and migrate your mailboxes as well. Then properly disconnect the AD sync. Perform the AD forest migration and deploy AD sync on new forest.
AAD Connect tool will do a soft-match with cloud users during the synchronization process (assuming UPN / email address hasn't changed) and bind them with the corresponding AD account in forest A.
