We are experiencing the exact same issue and have not found a solution yet. We do also use FSLogix on RDS.
Have you managed to resolve it in the meantime?
We've still got the problem. My guess is it's a bug between Outlook Classic and Copilot where User Profile Disks/FSLogix is in use in an RDS environment. Microsoft might fix it, they might not.
