This is fully supported and commonly done.
Microsoft 365 allows migrating mailboxes regardless of the source primary domain, then lets you add multiple domains and choose any one as the default.
After migration, you can switch the primary email to domain2.com while keeping domain1.com and domain3.com as aliases with no data loss or downtime.
