Office 2010 is out of mainstream support so you should really be moving to a newer version. That said, it should still be able to connect to Exchange Online. The sign-in assistant is only needed for federated scenarios.
You will however face certain issues, such as the fact that Outlook 2010 does not support Modern authentication, as well as many missing features.
