Limit scopes for third party apps people in my organization can log into using their microsoft creds

Hi,

There are many apps out there that offer a "log in with microsoft" option. I want to allow people in the organization to utilize this, but I want to limit the scopes the apps can request access to. For example, I'd want to apps to ask for info about the user profile, but not a users calendar. 

I have a Microsoft 365 for business account - is there a way to do this?
