Find outlook client versions

Depends on what you mean by versions. The Email app usage report will give you some info: https://portal.office.com/adminportal/home#/reportsUsage/EmailClients

If you want actual version/build numbers, the only way to gather such data is from the audit logs, one entry at a time.
