Change default font organisation wide and over all software?
Hey
Is it anyhow possible to set the Default font for all users / Software (Excel, Word, PowerPoint,...)

No this isn't possible, nothing built-in to Office 365 will set the default font for apps per your suggestion. There may be ways to do this by other means such as the suggestions https://social.technet.microsoft.com/Forums/office/en-US/41c39e1e-3d1a-4f8f-bf9c-cb41d94c4a00/deploy-official-font-as-default-for-all-ms-office-2016-application-using-gpo-any-other-way.
