Various Issues with Microsoft Excel for MacOS, the Office Home & Business 2021 Version
TEXTSPLIT is, from what I can tell, available only in a 365 Subscription, so perhaps that applies to the other features you're missing.

I feel like I’ve wasted my money then since I paid for a software hoping to get all of its functionality, you know?
Got it. Since you're on a Mac, as am I, there are a few other things -- Power Query, for example -- that only recently have been added to the Mac software. But things do roll out, so you are likely to see those features at some time in the future. In the meantime, it should be possible to upgrade. Check elsewhere here on the Microsoft site.

I can't imagine you'd have any trouble if yours is a legitimate (not pirated) copy, fully registered.
It may be that the best thing to do is get the annual subscription to Microsoft 365, which is available here. But that's up to you to determine. I'm not in any way employed by Microsoft; just a satisfied user who likes to answer questions about Excel.
