Various Issues with Microsoft Excel for MacOS, the Office Home & Business 2021 Version

I was in my data analytics class tonight and the lecturer was going through various functionality of Excel but I couldn't do the following because the options/functions doesn't show. For instance, I don't have access to "Recommended PivotChart." When I do click on "PivotChart," it keeps giving me this error message about my data not being in a list, when it is. There are proper headings on the spreadsheet. The data set came from the lecturer for all of us to use. Secondly, when I click on "Recommended PivotTable," the window dialog with various PivotTable does not appear. It just create one for me without allowing me to choose. Third, "Quick Analysis" isn't showing up for me either, or the usual drop-down menu/fill-out series option. Fourth, I can't use the formula "=TEXTSPLIT" – the lecturer showed us that we can just type "=SPLIT" and "=TEXTSPLIT" will appear as an option, but that wasn't the case for me. Lastly, I don't have access to "Forecast Sheet" – that button isn't showing up for me.

If anyone could assist me with these issues, I would really appreciate it since I need to use this software to follow class tutorials and homework. Thank you in advance!

I have the latest version for both, just like yours. However, the only difference is that mine isn’t Microsoft 365 Subscription.
